Fresh Summer Salad

For starters, this simple summer salad recipe combines ingredients jam packed with water—cucumbers, lettuce and tomatoes boast between 93-96% of water content. We also know tomatoes contain lycopene and studies have linked it with protection against oxidative damage. Cucumber and Romaine lettuce, on the other hand, are good sources of fiber and vitamin A. That’s just the tip of the iceberg! YUM!    

Ingredients

3 cups Romaine hearts, chopped
1 cup baby cucumbers, sliced
1 cup red beefsteak tomato, cubed
1 cup yellow heirloom tomato, cubed
3/4 cup crumbled feta cheese
1 tablespoon fresh dill
1 pinch salt
1 dash pepper

Directions

  1. Add all in ingredients to bowl and toss with olive oil and red wine vinegar (approximately ⅓ cup olive oil and ⅛ cup red wine vinegar)
