Easy London Broil

Because you marinate London Broil for a long while and then broil it, you can use cheaper, tougher cuts of meat like flank or top-round steak. That’s good news because we like our beef grass-fed, and it can be a little pricier overall. A cheaper cut will help bring costs down. And you won’t notice the difference since you’ll be tasting garlic, olive oil, and oregano. Serve it alongside a generous helping of roasted vegetables, sweet potato wedges, or a leafy green salad.

Ingredients

2 pounds London broil
1/2 cup low sodium soy sauce
2 tablespoons olive oil
2 tablespoons ketchup
1 teaspoon dried oregano
1 teaspoon freshly ground black pepper
2 garlic cloves, crushed

Directions

  1. Rinse meat well.
  2. Pierce both sides of meat with fork all over.
  3. Mix together all other ingredients (other than meat).
  4. Pour over meat and marinate for 4 hours or overnight.
  5. Broil for 10 minutes on each side.
