Ingredients

2 ears corn, boiled or grilled
1 tablespoon pine nuts, toasted
1 cup cherry tomatoes, halved
1 tablespoon grated parmesan cheese
1 tablespoon lemon juice
1 teaspoon olive oil

Directions

  1. Use a knife to cut along the long edge of corn cobs to remove kernels.
  2. Combine corn, pine nuts, tomatoes, and Parmesan cheese in a medium mixing bowl.
  3. Drizzle with lemon juice and olive oil, toss, and serve!
