A classic egg sandwich is one of the most satisfying, energizing, delicious things you can eat for breakfast. Seriously. This one is no exception. It’s got the egg (hard-boiled, in this case), a little bit of cheese, really good toasted bread, and a little bit of salt and spice. It may be a little healthier than your standard egg on a hard roll with SPK (that’s salt-pepper-ketchup), but it’s also more delicious (just sayin’), so you won’t miss the deli standard.

- Place egg and 1 cup water in small saucepan and bring to a boil. Turn heat off and let sit 10-15 minutes. Let cool.
- Peel and slice the egg.
- Toast the bread.
- Spread cottage cheese on toast, add egg slices and sprinkle salt, and cayenne to taste.
