Easy Cheesy Eggwich

A classic egg sandwich is one of the most satisfying, energizing, delicious things you can eat for breakfast. Seriously. This one is no exception. It’s got the egg (hard-boiled, in this case), a little bit of cheese, really good toasted bread, and a little bit of salt and spice. It may be a little healthier than your standard egg on a hard roll with SPK (that’s salt-pepper-ketchup), but it’s also more delicious (just sayin’), so you won’t miss the deli standard.  

Ingredients

1 large egg
1 slice sprouted grain bread
1/2 cup low fat cottage cheese
to taste sea salt
to taste cayenne

Directions

  1. Place egg and 1 cup water in small saucepan and bring to a boil. Turn heat off and let sit 10-15 minutes. Let cool.
  2. Peel and slice the egg.
  3. Toast the bread.
  4. Spread cottage cheese on toast, add egg slices and sprinkle salt, and cayenne to taste.
WHY WE LOVE THIS RECIPE Eggs and cottage cheese provide plenty of protein, while sprouted grain bread fills you up with fiber. Pro tip: Add a little avocado on top for extra healthy fats (and flavor).
