Kale Salad with Carrots

We never met a kale salad we didn’t love. This one’s selling point is its simplicity.  There’s no massaging required, you just chop the kale as finely as possible, toss it with carrots, and add the dressing. Pro tip: Make extra dressing and save it for a kale-apple salad the next day.

Ingredients

2 teaspoons olive oil
1 tablespoon fresh lemon juice
1/3 cup chopped parsley
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
Pinch sea salt
3 whole carrots, coarsely grated, shredded or spiralized
1 cup kale, chopped finely

Directions

  1. Mix the first 6 ingredients into a dressing and add the carrots and kale and toss well.
