Broccoli Rabe Toast

Avocado toast is so overdone (but okay, we admit it, we still love it). But it turns out you can put all kinds of other delicious, healthy foods on crisp, healthy bread (who knew?), like sauteed greens and onions, like we do, here. To turn it into a meal that includes protein, remember the popular maxim: Put an egg on it!

Ingredients

1/2 cup broccoli rabe
1 teaspoon olive oil
1 slice red onion
1 egg
1 slice sprouted grain bread

Directions

  1. Chop broccoli rabe into bite sized pieces.
  2. In a medium pan, heat olive oil.
  3. Add in onion and broccoli rabe and cook until wilted and aromatic.
  4. Remove broccoli rabe and onion, and crack one egg into the pan until cooked to desired doneness.
  5. While egg is frying, toast bread until lightly golden.
  6. Top the toast with veggie mix and egg, serve warm.
