Making a hearty breakfast burrito is an amazing way to switch up your morning egg routine. If you order one out, they tend to be calorie bombs, overloaded with carbs, cheese, and sour cream. Whip this one at home and you can fill it up with tasty veggies and use a whole wheat tortilla. Note: You can roast the bell peppers for a richer flavor in a pan over a low, gas flame or on a cookie sheet in the broiler, until the outer skin is black. Just immerse them in cold water when they’re done and peel off the outer skin.

Ingredients

2 eggs
1/2 cup black beans
1/4 cup red and/or yellow peppers, chopped
1/4 teaspoon (or to taste) garlic powder
to taste salsa
1 whole wheat tortilla
1 ounce jack cheese, shredded

Directions

  1. Spray nonstick pan with cooking spray and heat over medium heat.
  2. Pour in beaten eggs and scramble until cooked.
  3. Add beans, peppers, garlic, and salsa to pan and cook until heated through.
  4. Remove mixture from heat and place in center of tortilla, and top with cheese.
  5. Wrap up and enjoy.
