Banana Coconut Popsicles

Could tropical bliss be as simple as four ingredients and a freezer? This recipe may convince you the answer is yes. Bananas and coconut just go together like sunshine and palm trees. They also happen to be flavors kids love. If you have your little ones help you, they’ll be thrilled to make their own icy treats and may also ask to scrape the sides of the blender with a spoon. With these healthy ingredients, the answer to that question can be yes, too.  

Ingredients

2 bananas
8 ounces coconut milk
2 tablespoons honey
1/4 cup unsweetened coconut flakes

Directions

  1. Blend all of the ingredients in a blender until smooth.
  2. Spoon into popsicle molds or paper cups. Freeze until semi firm.
  3. Stick wooden sticks in.
  4. Freeze until frozen.
WHY WE LOVE THIS RECIPE These popsicles taste like lounging on the sand or in a hammock next to crystal blue water. To add to that blissful feeling: Coconut milk is rich in immunity-boosting lauric acid and MCTs (medium chain triglycerides), which are linked to fat burn.
