Vanilla Almond Milk Popsicles

Have you ever bitten into a Good Humor Toasted Almond Dessert Bar at the beach? The crunchy, classic ice cream bar reminds us of seaside vacations. Or of summer days during childhood running after the ice cream truck as it played its repetitive jingle. It doesn’t remind us Good Health, that’s for sure. Ingredients include artificial flavors, colors, corn syrup, and high-fructose corn syrup (yes, both!). To get a taste of the icy, almond treat, make these fresh, healthy popsicles instead. Even better, get your kids to help make them, so they’ll get to know (and love) fresh flavors and forget all about that silly jingle.

Ingredients

1 cup almond milk, unsweetened
1 teaspoon vanilla extract
1 tablespoon honey
1/8 cup slivered almonds

Directions

  1. Blend all of the ingredients in a blender until smooth.
  2. Spoon into popsicle molds or paper cups. Freeze until semi firm.
  3. Stick wooden sticks in.
  4. Freeze until frozen.
