4th of July Parfait Cup “Pies”

Come 4th of July, lots of people have Pinterest boards dedicated to flag cakes. If you’re a regular Betty Crocker, by all means, go for it (and invite us over for a slice and sparklers, please). But for many people, baking and decorating elaborate cakes is a little too time consuming (or above their kitchen skill level). If that’s the case, these “pies” are a great substitute. All you have to do to whip them up is a little bit of stirring and layering. Use the time you saved to jump in the pool again or practice your “oohs” and “aahs” for the fireworks.

Ingredients

4 ounces crème fraiche
4 ounces sour cream
16 ounces strawberry yogurt
1 pint strawberries, sliced lengthwise
1 pint blueberries
4 clear glasses

Directions

  1. Mix the crème fraiche, sour cream and yogurt together. For a picnic, store in an airtight container in your cooler until you are ready to serve.
  2. When ready to serve, layer the yogurt mixture, the strawberries, the yogurt, the blueberries in the cups to make a beautiful parfait. Garnish with a few extra berries.
