Turkey Taco Salad

Taco Tuesday, anyone? Or Taco Wednesday? Or Taco Thursday? The truth is, tacos are a fast, crowd-pleasing meal pretty much any night of the week. And this approach adds nutrition value to the typical dish without sacrificing fiesta-level flavor. Ground turkey is the perfect meat to provide lean protein, and spices like cinnamon, cumin, and chili powder excite both your taste buds and your body’s inflammation-fighting systems. Wrap it all up in romaine shells for a satisfying veggie crunch. Maybe with a little brown rice and beans on the side for fiber and extra protein?  

Ingredients

1/2 yellow onion, chopped
4 ounces ground turkey
1 teaspoon cumin
1 teaspoon chili powder
pinch cinnamon
to taste salt
2 cups Romaine lettuce, chopped
2 lime wedges
2 tablespoons salsa or pico de gallo
2 tablespoons Greek yogurt

Directions

  1. Preheat pan and lightly spray nonstick skillet with cooking spray.
  2. Sauté onion until translucent, about 3 minutes.
  3. Add turkey, cumin, chili powder, and cinnamon. Season to taste with salt.
  4. Cook, stirring constantly, until turkey is browned, 4 to 5 minutes. Place lettuce on plate and add cooked turkey.
  5. Garnish with lime wedges, salsa, and yogurt.

And you still get a satisfying crunch without reaching for packaged shells made from processed ingredients. Romaine is also an excellent source of vitamin A and vitamin C. Bonus: it’s great for gluten-free eaters and can be Paleo, too, if you hold the Greek yogurt.
