What’s the second reason? Mushrooms, of course. Fungi are full of health benefits, and shiitakes in particular are not only delicious but rich in polysaccharides and other beta-glucans. These compounds protect against cell damage, help boost immunity and bring down inflammation. But what’s the point of eating nutrient-dense food if it doesn’t taste good? This recipe adds onion, veggie stock and spices for flavor, and pairs sharp and earthy thyme with nutty farro and meaty, buttery shiitakes for a healthy meal everyone will love.

- Heat oil in pan and cook onions for 1 to 2 minutes. Add mushrooms and cook for another 3 to 4 minutes, or until mushrooms are soft and onions translucent. Set aside.
- Place farro in a pot with vegetable stock and bring to a boil over high heat. Reduce heat to low, cover, and let cook for 25-30 minutes, until it is softened but still chewy. If there is any liquid remaining, drain it off. Set aside and let farro cool.
- Combine farro, onions, mushrooms. Mix in thyme. Season with salt and pepper.
- Top with Parmigiano Reggiano.
