Southwest Salad

Taco salads are a definite crowd pleaser, and this salad revolves around a similar idea (just with chicken instead of taco meat). It’s filled with Tex-Mex-inspired ingredients like corn, red onion, tomatoes, and cheddar. Add spicy chicken and it’s a filling meal. By the way, you can buy organic chicken already seasoned or you can grill or bake some yourself. Just rub the chicken with some combo of spices like chili powder, cayenne, cumin, and salt before you cook it.

Ingredients

2 cups Romaine lettuce
1 tomato, diced
1/4 cup red onion
1 tablespoon corn
1 ounce reduced fat cheddar cheese, shredded
4 ounces spicy chicken breast, purchased from deli counter and diced
1-2 tablespoons balsamic vinegar

Directions

  1. Toss romaine, tomato, red onion, corn, cheddar cheese, and chicken.
  2. Drizzle with balsamic vinegar.
