Sandwich Pinwheels

Why turn a sandwich into pinwheels? There are two scenarios where this approach is way better than your standard square bread situation. First, they’re great for parties and picnics, since they’re small and bite-sized and can be served on a platter (or blanket) alongside other healthy finger goods. Second, they happen to just be kind of cute and fun, which may help get your kids excited about packing a healthy lunch to tote to school. Of course, feel free to enjoy them in as many other scenarios as you want.

Ingredients

1 tablespoon hummus
1 6 inch whole wheat tortilla
2 ounces sliced turkey (remember nitrite free)
2 ounces sliced ham (remember nitrite free)
1/4 cup Romaine lettuce, shredded
1/3 cup shredded carrots
1/2 beefsteak tomato, thinly sliced

Directions

  1. Spread hummus on whole wheat tortilla.
  2. Top with turkey slice, followed by ham. Repeat.
  3. Add lettuce, carrots, tomato.
  4. Roll up and cut into 1 inch pieces.
