When it comes to healthy cooking, Dijon is a secret-weapon ingredient. If you buy a quality brand, it packs a ton of flavor into a few simple ingredients without adding excess calories, fat, or sugar. You can use it as condiment in place of ketchup or mayo on burgers and sandwiches and for dipping fries (the baked, sweet potato kind, of course). You can also use it to make tasty salad dressings…and marinades. This marinade pairs it with olive oil and lemon and a little herbal kick. It will transform bland boneless, skinless chicken breasts so that whether you throw them in a salad, eat them whole alongside veggies for dinner, or toss them on top of grains, deliciousness is guaranteed.  

Ingredients

1/2 teaspoon dried tarragon
1/3 cup low sodium chicken broth
3 tablespoons Dijon mustard
1 tablespoon olive oil
1 tablespoon lemon juice

Directions

  1. Mix all ingredients together until combined.
