Mango Chicken

Eating mango hot may sound a little strange. But cooking it actually brings out even more of its sweetness, and that flavor contrasts really well with garlic and ginger. What you end up with is delicious, island-reminiscent Mango Chicken. Pro tip: Top with a dollop of fresh, homemade guacamole and eat it alongside spicy rice and beans.

Ingredients

1 boneless skinless chicken breast
to taste salt and freshly ground black pepper
2 teaspoons olive oil
1/2 garlic clove, minced
1 teaspoon fresh ginger root, minced
1/2 mango, peeled, seeded and diced
1/2 tablespoon apple cider vinegar
splash white wine
1 tablespoon cilantro, chopped

Directions

  1. Heat 1 teaspoon oil in grill pan.
  2. Rub chicken with salt and pepper and grill or broil.
  3. Add chicken to pan and cook 3 to 4 minutes each side or until cooked through. Set aside.
  4. Heat remaining oil in a medium skillet over medium heat and sauté garlic for about 1 minute.
  5. Mix in ginger and mango, and cook 3-4 minutes, until mango is tender.
  6. Pour in the cider vinegar and white wine.
  7. Season with salt and pepper.
  8. Stir in cilantro, and remove from heat.
  9. Spoon over the chicken to serve.
