Healthier Kettle Corn

Kettle Corn is a classic sweet-and-salty treat. It’s crunchy and satisfying and the smell probably reminds you of being at a fair or festival. Our version is just as delicious but slightly more nutritious. We use coconut oil instead of vegetable or canola and significantly less sugar than most recipes call for. Don’t worry, since we add a secret flavor enhancer (cinnamon!), you won’t miss it. Make a batch for movie night…or basically any social occasion that calls for it.  

Ingredients

1 tablespoon coconut oil
1 teaspoon organic cane sugar
1/4 cup corn kernels
1/4 teaspoon salt
sprinkle of cinnamon

Directions

  1. In a sauce pan over medium heat, add the coconut oil and 3 corn kernels. Cover pan.
  2. When the 3 kernels pop, add the sugar and remaining kernels to pan. Cover the pan, and shake lightly to ensure all kernels are coated equally. Leave over medium heat shaking intermittently until most kernels are popped.
  3. Sprinkle with salt and cinnamon, and enjoy!
WHY WE LOVE THIS RECIPE Popcorn is a whole-grain, fiber-rich, low-calorie food when you do it right. Add a little coconut oil and you’ve got your healthy fats, while cinnamon adds antioxidants. Did we mention it’s, well, ridiculously delicious?
