Grilled Prosciutto Jalapeño Poppers

Forget deep-fried, cream cheese-filled jalapeño poppers. These may be the perfect party food. Meat lovers won’t even notice there are nutritious veggies wrapped in the cheesy, spicy morsels, and they’re perfectly bite-sized for passing. Plus, how simple is the recipe? Four ingredients and barely any prep work.

Ingredients

8 ounces goat cheese
1 tablespoon sundried tomatoes, diced
18 jalapeños, washed with a vertical slit cut from top to bottom (remove seeds if you like less heat)
18 extra thin slices of lean prosciutto (remove visible fat)

Directions

  1. Mix goat cheese and sundried tomatoes together in a medium sized bowl.
  2. Spoon cheese mixture into the jalapeño slit and wrap with a slice of prosciutto.
  3. Secure with a toothpick.
  4. Grill at moderate heat for 12 minutes, until the jalapeño is no longer bright green.
WHY WE LOVE THIS RECIPE Jalapeños are an excellent source of vitamin C and contain a compound called capsaicin, which has been found to help with appetite control. Since these are also filled with satiating protein, they may help fill you up to prevent bingeing on less healthy party foods, later.
