This recipe combines early summer’s sweet peaches with creamy burrata cheese (a combo of fresh mozzarella and cream) and then drizzles them both with honey and a sprinkle of basil. Pro tip: Look for peaches just shy of ripeness for this recipe. They’ll hold their consistency better on the grill. And save those riper, juicier peaches for eating whole and raw in all their chin-dripping goodness! While the grill’s still hot from the peaches, you might brush some crusty bread with olive oil and throw it on the grates as well. Assemble it all on a pretty platter garnished with arugula and maybe a sprinkle of pistachios or your favorite nuts, and you’ve got an incredible summer party staple guaranteed. - Halve peaches and remove pits. Spread a thin layer of butter on both sides of peaches.
- Grill for 3 minutes each side.
- Place on a plate and top each with burrata.
