Grilled Peaches With Burrata, Honey and Basil

Nothing says warmer weather like grilled fruit, so get ready to please your barbecue crew with this serious crowd-pleaser: Grilled Peaches with Burrata, Honey and Basil. It’s seriously simple and simply fabulous all in one! Peaches are one of those fruits that you might be able to buy for several months of the year, but they really don’t come into their juicy, ripe glory until early summer. This is when they start to show up at your Farmers Market and local grocery and, boy, are they worth the wait! This recipe combines early summer’s sweet peaches with creamy burrata cheese (a combo of fresh mozzarella and cream) and then drizzles them both with honey and a sprinkle of basil. Pro tip: Look for peaches just shy of ripeness for this recipe. They’ll hold their consistency better on the grill. And save those riper, juicier peaches for eating whole and raw in all their chin-dripping goodness! While the grill’s still hot from the peaches, you might brush some crusty bread with olive oil and throw it on the grates as well. Assemble it all on a pretty platter garnished with arugula and maybe a sprinkle of pistachios or your favorite nuts, and you’ve got an incredible summer party staple guaranteed. Ingredients

4 peaches (not fully ripe)
1 teaspoon butter
8 ounces burrata (torn into 8 pieces)
1 tablespoon honey
to taste sea salt and pepper
1 tablespoon fresh basil, chopped

Directions

  1. Preheat grill pan or outdoor grill.
  2. Halve peaches and remove pits. Spread a thin layer of butter on both sides of peaches.
  3. Grill for 3 minutes each side.
  4. Place on a plate and top each with burrata.
  5. Drizzle honey over entire dish and sprinkle with sea salt, pepper and basil.
