Grilled Chicken Sausage Salad

Have you noticed the many varieties of organic chicken sausage now available at the grocery store? While processed meats are generally something we advise staying away from, chicken sausage, in particular, is a great source of fast, flavorful protein, since you barely have to cook it. Just look for varieties that haven’t been cured using added nitrates and that carry the USDA organic seal. Then toss the delicious slices with spinach and feta for a quick, delicious meal.

Ingredients

2 precooked chicken sausages
2 cups raw baby spinach
2 tablespoons thinly sliced red onions
1 ounce goat cheese or feta cheese, crumbled
1 tablespoon fig vinegar

Directions

  1. Cook sausages according to package directions and slice into 1 inch rounds.
  2. Toss spinach and onions and top with cheese and sausage and drizzle vinegar on top.
WHY WE LOVE THIS RECIPE Starting with nutrient-dense spinach as a base for any meal is a great idea. Chicken sausage is high in protein and less fatty than pork sausage, and feta adds salty flavor.
