Dijon Vinaigrette

This Dijon Vinaigrette is a slightly creamy, tangy dressing that’s easy to make at home. Because its flavor is pretty strong, it’s best for sturdy, mild-tasting greens like spinach or romaine. (Delicate arugula, on the other hand, might fight for flavor dominance with its peppery spirit.) It also works really well on grains, so you can use it to dress a quinoa or farro bowl that’s filled with veggies.  

Ingredients

1/3 cup water
1/4 cup white wine vinegar
1 tablespoon Dijon mustard
to taste sea salt
to taste freshly ground black pepper

Directions

  1. Mix all ingredients together until combined.
WHY WE LOVE THIS RECIPE Unlike bottled dressings that are all low-quality oils and sugar, this one is just a simple mix of healthy ingredients. Vinegar is great for digestion, and Dijon mustard adds a ton of flavor with very few calories.
