Easy Balsamic Chicken

Add this to your list of fast, easy ways to turn standard boneless, skinless chicken breasts into dinner on a busy night. This recipe barely requires you to chop the onion, and then it’s just sprinkling on oil, vinegar and spices and sautéing the chicken until it’s done. It really can’t get any easier. And seriously, who doesn’t love the taste of balsamic chicken?  

Ingredients

2 teaspoons olive oil
3 skinless, boneless chicken breast
1/2 large onion, chopped
1/3 cup balsamic vinegar
1/4 cup red wine vinegar
1/2 tablespoon dried oregano

Directions

  1. Season chicken with salt and pepper and then in large skillet, heat oil and sauté chicken until slightly brown on each side.
  2. Remove chicken and set on plate.
  3. Sauté onions in same skillet over low heat until translucent.
  4. Slice chicken into 1 inch thick strips.
  5. Add chicken back to skillet, then add balsamic mixture, cover and cook on medium heat for approximately 5 more minutes.
