Avocado Boat Egg Bake

There are a million reasons we love avocados. High up on the list is this one: They happen to be the perfect shape to serve as “boats” that can ferry eggs directly into your mouth. Avocado boats are not only cute and delicious, they also might take the prize for the easiest way to cook eggs. If your scrambled eggs keep coming out rubbery, your fried eggs are too runny, and your poached eggs won’t stay in one piece…just crack a shell into an avo and stick it in the oven. Avocado toast, who?

Ingredients

1 avocado, halved, pit removed
2 organic eggs
Salt
Pepper
1 teaspoon fresh chopped scallions

Directions

  1. Preheat oven to 450 degrees.
  2. Use a spoon to scoop each avocado half until large enough to accomodate 1 egg.
  3. Stabilize avocado upright with bunched tinfoil, if necessary.
  4. Crack 1 egg into each avocado half, and sprinkle with salt and pepper.
  5. Bake for 10-15 minutes, or until the white is set and the yellow is slightly runny.
  6. Sprinkle with fresh herbs and serve warm.
