Sweet Potato and Sausage Bake

Sweet Potato Hash with Fresh Herbs, sliced sausage, Peppers and Onions

This kind of dinner falls into one of our favorite categories. We call it “recipes that basically just require you to throw a pile of healthy food into the oven.” Other than quickly chopping up the sweet potato and garlic, that’s really all the process requires. It helps that you start with precooked chicken sausage (and it’s now easy to find healthy, organic brands at the grocery store). And the addition of fresh herbs creates an even further illusion of long hours spent cooking. Use the time you saved to savor the delicious, nutrient-dense meal while catching up with your significant other (not checking Instagram).

Ingredients

1 medium sweet potato, cut into 1 inch pieces
1 precooked, chicken sausage, cut into 1 inch rounds
1 garlic clove, minced
1 tablespoon fresh oregano, chopped
2 teaspoons olive oil
1/3 cup frozen cauliflower florets, thawed

Directions

  1. Preheat oven to 350 F. Lightly coat small baking dish with cooking spray.
  2. Combine sweet potato and chicken sausage in medium bowl. Toss with garlic, oregano, and oil. Season with salt and pepper to taste.
  3. Place potato mixture in prepared dish and bake 30 minutes. Stir in cauliflower and bake 10 to 15 more minutes, or until the potatoes are tender.
WHY WE LOVE THIS RECIPE Chicken sausage makes for a protein-rich, filling meal. Sweet potatoes are packed with more health-boosting beta-carotene than any other fruit or vegetable, and they also provide plenty of fiber. Add in olive oil, garlic, and oregano, and you’ve got more than enough flavor and antioxidant action.
