Kale, Avocado, and Blood Orange Salad

Kale salad

Ingredients

2 avocados, small
½ lemon, juiced
¼ teaspoon sea salt
¼ teaspoon pepper
4 cups kale, chopped
2 blood oranges
½ cup pine nuts

Directions

  1. Mash avocados with lemon juice, sea salt, and pepper.
  2. Add chopped kale. Thoroughly mix, coating the kale with the avocado.
  3. Peel and cube blood oranges, then add to the salad.
  4. Toss in the pine nuts and serve.
WHY I LOVE THIS RECIPE One of my favorite ways to enjoy the tougher texture of kale is to “marinate” it in mashed avocado and lemon juice, a great base for any kale salad. From there, I add winter seasonal citrus fruits—in this case, blood oranges— along with pine nuts for a buttery taste. This gives the perfect balance of color, flavor, antioxidants, and nutrients.
