Better-Than-Cereal Bowl

Even if you’re not a breakfast person, you’re going to want to start your day with something. All meals are important but, it can be argued that breakfast is  the most important meal as it lays the foundation for the rest of the day.  Cereal is usually a combo of refined carbohydrates loaded with added sugars and often other unhealthy ingredients and  may only make you hungry soon after versus providing long lasting energy and a feeling of satiety. Instead of that same ole cereal you’ve been eating since college, give a filling and delicious bowl of this better-than-cereal bowl a try. 

Ingredients

⅓ cup hot cooked bulgar (or hot cooked quinoa)
¼ cup unsweetened applesauce
¼ teaspoon ground cinnamon
¼ teaspoon pure almond extract
½ cup fresh dark sweet cherries, pitted and halved or frozen, thawed
1 tablespoon chipped, dry-roasted unsalted or raw almonds

Directions

  1. Combine the bulgur, applesauce, cinnamon and almond extracted in a small bowl.
  2. Gently stir in the cherries and almonds and add additional cinnamon if desired.
  3. Serve with 1 cup of fat-free or almond milk.
