If you've ever heard me tell the story of how Nutritious Life came to be then you know that part of it started while at undergrad at Tufts. ⁠📚👩🏻‍🎓⁠
⁠
As a college student, I didn't think of myself as a science person (things have certainly changed) so I didn't take nutrition. But, I was really interested in healthy foods and I really liked to eat, so I used to frequent "Pound Dining Hall." Yes, there was (is there still?) a dining hall named "Pound."⁠ 👀😅⁠
⁠
Then, I'd go to the campus center and buy BAGS of fat-free candy. Cuz, ya know, fat-free 🤷🏻‍♀️ and it was the 90s. Then, I'd go study, or to lacrosse practice and...feel like CRAP.⁠ 🤦🏻‍♀️⁠❌⁠
⁠
It was then, that my innate interest in nutrition really blossomed. I became somewhat obsessed with - not necessarily being "skinny" - but how food affected the body, they way it made me feel, my energy, mood etc etc etc⁠. 😍💪🏻👊🏼⁠

Years later, that interest that "blossomed" at Tufts has grown into not just a flower, but a full-blown garden...the Nutritious Life Garden that is (I couldn't help myself and I'm a dork!) 😉😆⁠

If your #fall cravings are still going strong, try this Pumpkin Pie Overnight Oats recipe from @lifeeditnutrition 😋⁠
⁠
You'll need:⁠
✔️ 1/2 cup of rolled oats⁠
✔️ 1 tbsp chia seeds⁠
✔️ 3/4 cup unsweetened vanilla almond milk⁠
✔️ 1/4 100% pumpkin purée⁠
✔️ 1/2 tsp pumpkin pie spice⁠
✔️ 1/2 tsp cinnamon powder⁠
✔️ 1/2 tbsp maple syrup (adjust for sweetness)⁠
✔️ 1 scoop unflavored Vital Protein Collagen powder OR your favorite protein powder⁠

To make:⁠
Add all ingredients (except for oats and chia seeds) to a blender and blend for 30 seconds.⁠
⁠
Place oats and chia seeds in a jar and shake shake shake!⁠
⁠
Pour your liquid mixture into the jar with chia seeds and oats.⁠
⁠
Stir until all ingredients are combined, and then place in the fridge overnight.⁠
⁠
In the morning, top with bananas, apples, nuts, and seeds!⁠
