Energy balls are basically the best thing to happen to the snack world. They’re balanced, bite-sized, and easy to make…I mean, what more could you ask for? Pack these peanut butter energy balls in your bag before a busy day, and you’ll tackle your to-dos feeling nourished, full, and happy. (More of a dessert person? INGREDIENTS 1 1/2 cups oats, instant 1/2 cup nut butter of choice (I used a combo of cashew, almond, and sunflower butter, but feel free to use peanut butter!) 1/2 cup pumpkin puree 1/4 cup chia seeds 1/4 cup honey 1 teaspoon vanilla extract 1 teaspoon cinnamon 1/4 cup coconut, shredded Dark chocolate chips to taste DIRECTIONS Mix the ingredients together. Form into balls. Refrigerate for an hour or freeze for future use. WHY WE LOVE THIS RECIPE These energy balls take minutes to assemble and are the perfect, portable snack for running errands or bouncing between meetings. It’s a balanced bite featuring fiber from the oats and pumpkin, healthy fats from the chia seeds and coconut, and protein from the nut butter. That means sustained energy you can count on!
