Many of you are squeezing in those last BBQs of the season so thought I'd share a few tips for you.

✔️There are two types of chemical reactions that occur when you bbq meat.

✔️Fat drippings from meat create smoke that contains chemicals called PAHs (polycyclic aromatic hydrocarbons). When the smoke surrounds the meat during the cooking process, it transfers those carcinogenic PAHs onto the meat itself.

When you grill meat at high temps and/or for long periods of time, a reaction in the food occurs, creating HCAs (heterocyclic amines).

PAHs and HCAs has been linked to cancer. The research in humans is not clear but some studies have shown a correlation between eating well-done, fried, or barbecued meats and increased risk of colon, pancreatic and prostate cancer.

What can you do to prevent exposure (aside from giving up the bbq altogether which no one wants to do!):

1) Grill, don't burn.

2) Go for lean cuts of meat.

3) Put time into prep with a marinade. This helps lessen HCA formation due to antioxidants found in herbs and spices such as turmeric, basil, rosemary, and oregano. We aim to marinate overnight!

4) Load up on veggies on the side.
