Lindsey O'Connell

Lindsey O’Connell is the editorial director at Nutritious Life. She is responsible for content oversight, reporting, and creation for the website, video, and podcasts. Formerly, O’Connell was the Special Projects + Entertainment Director for Good Housekeeping, Cosmopolitan, Women’s Health, Woman’s Day and Redbook magazines where she booked all celebrity covers and features, interviewed talent, developed new editorial partnership opportunities, television integrations, and editorial events. While at the company, she also created a first-of-its-kind Good Housekeeping store, GH Lab, in partnership with the Mall of America and Amazon.

Prior to her role at Hearst, O’Connell was the Special Projects and Communications Director at Women’s Health. There she created strategic editorial features, events and partnerships across television, print digital and social platforms. She also brokered major collaborations with leading national media outlets, government agencies, celebrities and tastemakers.

In 2014, Benoit was named a “Rising Star” by Folio: Mag and in 2015 PR News recognized her among the Top Women in Media. Previously, O’Connell worked at SELF Magazine as the Associate Director of PR; the Condé Nast Media Group working on events such as Fashion Rocks, Movies Rock; and for Random House, Inc. She is a graduate of Manhattan College in New York and currently lives in Astoria, NY with her husband Brian and son Hunter.

We aren't the 𝙗𝙞𝙜𝙜𝙚𝙨𝙩 fans of cereal over here since most brands are ultra processed and contain added sugar + oftentimes unhealthy added chemicals. ⁠✖️⁠⁠

That said, we know that 2.7 BILLION boxes of the breakfast staple are sold each year and it 𝙞𝙨 a way for many people to meet their nutrition needs. Plus, there are plenty of organic, better-for-you brands to choose from. ⁠🙌⁠⁠

𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒:⁠⁠

✨1 cup almond flour⁠⁠
✨1 cup tapioca flour⁠⁠
✨3 tbsp melted coconut oil⁠⁠
✨1 tbsp unsweetened apple sauce⁠⁠
✨1/4 cup maple syrup⁠⁠
⁠✨1 tbsp cinnamon⁠⁠
✨3 tbsp coconut sugar⁠⁠
⁠⁠
𝐃𝐈𝐑𝐄𝐂𝐓𝐈𝐎𝐍𝐒:⁠⁠
⁠⁠
1. Combine both types of flour with oil + apple sauce. Work together with your hands until the mix resembles bread crumbs. ⁠⁠
2. Add maple syrup into the mix until a dough starts to form (it should hold together well).⁠⁠
2. Stick dough in the fridge for 30 minutes. ⁠⁠
3. Flour your work surface + rolling pin. ⁠⁠
4. Separate dough into 6 chunks. Roll out into chunks until about 1/2 inch thick.⁠⁠
5. Lightly spread melted butter/oil onto surface and sprinkle with cinnamon sugar mix. Roll up and chop into mini rounds. Repeat this with the rest of the sections of dough. ⁠⁠
6. Preheat oven to 350F. Lay out rounds on a baking sheet + bake for 10 mins. ⁠⁠
7. Store in an airtight container in the fridge + enjoy!⁠⁠
